Iso Whey Pumpkin Streusel Muffins Recipe

Ingredients:

Muffins:

  • 118 ml milk (dairy or non-dairy) 
  • 1½ tsp apple cider vinegar (or yogurt, cottage cheese, or buttermilk) 
  • 250 g steamed, non-stringy pumpkin (like butternut squash) 
  • 200 g coconut sugar 
  • 118 ml coconut or olive oil 
  • 1 tsp vanilla extract 
  • 250 g self-raising, oat, or spelt flour 
  • 2 ½ tsp baking powder 
  • ½ tsp baking soda 
  • 1 tsp ground cinnamon 
  • ¼ tsp sea salt 
  • 1 scoop Biogen Iso Whey Premium (vanilla) 

Streusel:

  • 1 cup walnuts, whole or chopped 
  • â…“ cup coconut sugar 
  • ¼ cup melted coconut oil 
Method: 
  1. Preheat & Prep: Preheat oven to 180°C (350°F). Line muffin tray with cases.
  2. “Buttermilk”: Combine milk and vinegar. Let sit while you prep.
  3. Wet Mix: Whisk “buttermilk,” pumpkin, sugar, oil, and vanilla.
  4. Dry Mix: Whisk flour, baking powder, soda, cinnamon, and salt.
  5. Combine: Fold dry into wet, don’t overmix. Fold in protein powder.
  6. Streusel: Combine walnuts, sugar, and oil.
  7. Fill & Top: Fill cases ¾ full. Top with streusel.
  8. Bake: 35-40 mins, until a skewer comes out clean.
  9. Cool: Cool in the tin for 10 mins, then on a rack.
