Ingredients
- 1 can chickpeas (drained)
- 10 baby tomatoes (halved)
- ½ cup cucumber (diced)
- ¼ red pepper (diced)
- ¼ yellow pepper (diced)
- ½ small red onion (diced)
- 1/2 red bird’s eye chilli (diced)
- 2 cups baby spinach (shredded)
- 3 peppadews
- 1 block herbed feta (crumbled)
- ½ tsp crushed garlic
- 2 tblsp olive oil
- 3 tblsp lemon juice
- 1 tsp cumin
- Salt and pepper to taste
Method
- 1. Add drained chickpeas to a bowl and add all diced and prepared fresh ingredients.
- 2. Mix together and drizzle olive oil, lemon juice and garlic.
- 3. Mix well, serve and enjoy!
