  • ½ cup coconut strips
  • ¾ cups toasted hazelnuts, roughly chopped
  • Chocolate chips (to taste)
  • 1 pack Biogen Protein Choc-Coated Pretzels (added post-baking)
  • 1 cup vanilla protein powder
  • 1 cup nut butter (your choice)
  • â…“ cup melted coconut oil
  • â…“ cup honey or golden syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
Method:
  1. In a large mixing bowl, toss together the rolled oats, shredded coconut, coconut strips, toasted hazelnuts, and vanilla protein powder until well mixed.
  2. In a small saucepan over medium heat, combine the nut butter, melted coconut oil, honey (or golden syrup), and vanilla extract. Stir until the mixture is smooth and well incorporated, then stir in a pinch of salt.
  3. Pour the nut butter mixture over the dry ingredients in the bowl. Stir everything together, ensuring that the oats and nuts are evenly coated.
  4. Spread the granola mixture onto a baking tray lined with parchment paper. Bake in a preheated oven at 180°C for 15-18 minutes, stirring halfway through to ensure even browning
  5. Once baked and slightly cooled, break the granola into clumps as desired. Stir in the Biogen Protein Choc-Coated Pretzels and chocolate chips. The residual heat will slightly melt the chocolate, adding a delicious richness.
