Protein Banana Bread With Night Feed Casein
This scrumptious protein banana bread combines the goodness of ripe bananas with the protein punch of Biogen’s Night Feed Casein Protein powder. It’s a deliciously satisfying option for any time of day, whether it’s a quick breakfast bite or a comforting evening snack. Let’s get baking!
Ingredients:
- 3 overripe bananas
- 1 heaped scoop of Night Feed Casein Protein, Vanilla Custard flavour
- 1¾ cups of self-rising flour (you can substitute half with oat or wholewheat flour)
- ½ cup of brown sugar
- 1 cup of milk
- 1 tbsp of apple cider vinegar
- 1 tsp of vanilla extract
- ½ tsp of ground cinnamon
- 1½ tsp of baking powder
- ½ tsp of baking soda
- Pinch of salt
- Chopped brown dates to top
Method:
- Preheat your oven to 180°C.
- Begin by mashing the ripe bananas in a mixing bowl. To this, add the brown sugar, milk, oil, apple cider vinegar, and vanilla extract.
- Sift in the self-rising flour, along with the Night Feed Casein Protein. Mix until all ingredients are well combined and you have a smooth batter.
- Line a bread tin with parchment paper and pour the batter into it. Sprinkle the chopped brown dates over the top.
- Place the tin in the preheated oven and bake for 35-40 minutes, or until the top is a lovely golden brown and a toothpick inserted into the centre comes out clean.
- Once baked, remove the banana bread from the oven and allow it to cool in the tin to room temperature.
- Once cooled, carefully remove the banana bread from the tin, slice it up, and serve.
